Chunky Cinnamon + Apple Pancakes with Georgina Mariee

Who said pancakes were just for Breakfast? These cinnamon and apple pancakes can be enjoyed on any occasion and are delicious topped with a little yoghurt and the caramelised apples. 

This is the third recipe our friend Georgina Mariee has shared with us, and it might be that this is our favourite one yet. They are perfect to enjoy fresh and hot, but you could also make more and leave some to enjoy cold for breakfast the next day (if you can wait!) with some yoghurt and fruit.

CHUNKY CINNAMON + APPLE PANCAKES

INGREDIENTS
1 apple, cut into chunks
1 tsp coconut oil
1 heaped tsp brown sugar
1/2 tsp cinnamon

1 cup Ginger Health Foods 'The Nutty Seed One’ 
1/2 banana, peeled
1 egg
1/2 cup milk
1 tsp brown sugar
1 tsp baking powder
1 tsp cinnamon
Pinch of salt

METHOD
Start by make the caramelised apples:
▫️ Preheat a frying pan to a medium heat.
▫️ Add the oil and allow to melt, then adding and apple. Stir to coat.
▫️ After around 3 minutes, when the apple chunks are soft, add the sugar and cinnamon. Mix well to ensure fully coated.
▫️ Cook for a further 3 minutes, until golden and caramelised. Set aside.

To make the pancakes:
▪️ Lower the heat of the pan slightly.
▪️ Place all the ingredients in a blender and blend until smooth.
▪️ Spoon a heaped Tbsp or two into the pan, using the back of the spoon to form into a pancake. Cook for a couple of minutes each side.
◾️ Repeat until you have used all the mixture.

The secret with pancakes is to be patient. Let them cook slowly 🤍
