🍪 Chewy Muesli Cookies

🍪 Snacks just get better 🍪
When the munchies hit, these Chewy Muesli Cookies using our Date + Walnut Breakfast Bowl from Outstanding Oats will hit the spot!
CHEWY MUESLI COOKIES
Makes: 8-10
🛒 you’ll need:
✅ 100g plain flour
✅ 100g Ginger Health Foods Date + Walnut One
✅ 100g butter
✅ 100g caster sugar
✅ 60g light brown sugar
✅ 1/2 tsp baking powder
✅ 1/2 tsp bicarbonate of soda
✅ 1 tsp vanilla
✅ 1 tbsp cornflour + 2 tbsp water
✅ 50g raisins (or any other extras like nuts + seeds)
 
Recipe:
1️⃣ cream together the butter and both types of sugar until light and fluffy.
2️⃣ mix in the flour and oat mix (it will look quite dry!)
3️⃣ in a separate bowl mix together the cornflour and water then add to the main mix.
4️⃣ add the vanilla, baking powder, bicarbonate, raisins and mix well - the mixture should start to come together like cookie dough.
5️⃣ divide into 8-10 pieces and roll into balls.
6️⃣ put the balls on to a lined baking tray about 5cm apart (they spread a lot so do this to avoid them turning into one giant cookie!!)
7️⃣ bake the cookies at 160 degrees for 15 mins. once they’ve turned slightly golden and flattened out remove from the oven and leave to cool for another 15 to harden up and set!
Now...coffee ready, feet up and chill out 😀
